Freekeh, tomato, olives and smoked cranberry salad

A delicious salad full of smoky flavours, using ancient grain freekeh, perfect as part of a festive buffet or as a salad to accompany chicken or pork

  1. Chop the herbs
  2. Drain the oil from the tomatoes and olives
  3. For a hot eat salad – cook freekeh and serve immediately.  If from a packet, heat according to instructions
  4. Thoroughly mix everything together and serve

Tom's top tip: If you can't find smoked cranberries, then regular dried cranberries will do.
